I think they would be great for breakfast, instead of a muffin. However, I think the best way would be with a nice big scoop of vanilla ice cream!
Coat a 13 x 9 pan with non stick spray
3 eggs
1 3/4 cups sugar
1 cup vegetable oil
1 tsp vanilla
2 cups all purpose flour
1 tsp cinnamon
1 tsp baking powder
1/2 tsp salt
2 cups diced apple ( 2-3 apples depending on size)
Preheat oven to 350 degrees
In a large bowl beat eggs and sugar until fluffy and pale.
Add oil and vanilla; mix well. Sift dry ingredients and mix into wet mixture.
Stir in apples.
Spread evenly into pan.
Bake for 45-50minutes or until toothpick inserted into the center comes out clean.

So appreciate you posting the recipe, looking forward to making this. I will use Granny Smith apples as they are sturdy when baked, and I enjoy the tartness. Enjoyed visiting your site.
