From what I am seeing on other blogs, this year is not the best year to have a vegetable garden. I have never had a garden, I just grow a few pots of basil to use in sauces and on pizzas.
The other day I wanted to make zucchini muffins so I had to go to the grocery store and buy two zucchinis.Here is the recipe.
3/4 cup oil
4 eggs
2 1/2 cups flour
1 1/2 cups sugar
1/2 cup oatmeal
1 Tbs baking powder
1 tsp salt
2 cups zucchini (shredded)
Beat together the oil and eggs with a fork.

Beat together the oil and eggs with a fork.
In a large bowl mix together the next 5 ingredients.
Add egg mixture and shredded zucchini.
Pour into greased muffin tins (I used Pam).
You can sprinkle the tops with cinnamon and sugar if you like.
( I forgot to do this but I still liked mine)
Bake for 25 minutes at 400 (remember ovens vary mine did not take 25 minutes)
Makes 18 muffins.

thanks for sharing the recipe I had some zucchini bread the other day it was so good and I have fresh blueberries in the fridge right now I will try this soon
