Pistachio Muffins

In the Wednesday food section of our local paper was a recipe for pistachio muffins. I like muffins and pistachios so why not give this recipe a try. It was very easy and I had all the ingredients except the pudding mix.
I wanted to show you how cute the bottom of the muffins are. My Mother gave me the muffin pans a few years ago.
Here is the recipe from the local paper. If you click on the picture it might be easy to read, if you want to make a batch. I thought they were a little dry, but I don't mind that. I am 99% sure I followed the recipe correctly. 2 tablespoons of baking powder seems like a lot..not sure if the paper is right. It couldn't be me???I am going to give them another try. My solution to the dryness, would be to add put a little butter on the muffin. I can not find too much wrong with that! Most everything taste better with a little dab of butter!

The muffins look so yummy! You're so right, butter makes everything taste better, especially warm bread or muffins.

Mmmmm, I love pistachios. Have you ever made Watergate pudding? Prepare large box of pistachio pudding. Drain 1 small can of crushed pinapple well. Mix pudding, pinapple and one container of cool whip. Yummy! I'm going to give this muffin recipe a try. Thanks.

Pistachio muffins? That is new to me. They look good. More butter, yes, or oil, that would add more moistness,I think.
